I'm interested in this question too.  Same thing at my house with my 2 year old.

I am totally dealing with this now. Bribing is helping (I know, I know), but also just acting like it's the best thing to ever go in my mouth "Wow! Has anyone else tasted this broccoli? It's awesome!!!" sometimes works. I also call new foods names of fave's, like she refused to try a Quesadila until we called it "an ooey gooey grilled cheese". :)

Little bits at a time...I started with just a little broccoli stirred into the mac & chz and now my kids think it is wierd if I make it without it.  Quesadillas are great too because you can slip a few finely chopped veggies in there too and then increase them as he gets a taste for them.  Pizza works well too - mushrooms look a lot like meat on a pizza if you cut them finely.  Cheese sauce can work miracles too - I know it isn't good for them, but if it helps introduce the food, why not?  With my kids I find that sometimes veggies 'look' wierder than they taste so if I can get them used to the taste before they have to encounter them face-to-face (so to speak) it might help.  Good luck!

I have the Jessica Sienfeld book- she hides pureed vegetagles in dishes to help pack vitamins in.  I just started uses it more now that i have a younger child that is on baby food- I just dump the baby food into sauces, casseroles, hamburgers, etc...

Another thing I have been doing lately is being creative with the "plating" (i watch too much food network).  Linguine becomes train tracks, tortellini becomes train wheels, meatballs are the train, broccoli=trees, mashed potatoes are a volcano (gravy is the lava), etc... I am still experimenting, we just started!!

I know this horrible but my stepson is 2 and a very picky eater. We usually end up force feeding him as we get so frustrated with him. He will still eat baby food veggies-the green stuff especially. But he is 2 and that will not give him the nutrition he needs. He is very scrawny and does not eat nearly enough for all the running around he does. I hate losing my patience with him but seriously enough is enough! Sometimes we end up just letting him sit there for an hour in his high chair until he finishes eating everything on the plate. We are hoping that he will figure out that he needs to finish dinner completely before he is allowed down and that throwing a tantrum is not going to get him out of the chair any sooner. Don't know any other way to get him to cooperate...

I had baked zucchini bread, and my ex-MIL told me to tell my son I didn't know what was in it.  Of course, he asked what was in it, and I said IDK.  He replied...well, if you don't know what's in it, I ain't gonna eat it.  All we can do is try.
